Add 2 eggs. Add lemon juice. Stir mixture well. Add onion, pepper, crackers. Stir.&lt;br /&gt;&lt;br /&gt;Form into patties 3/4 to 1 inch thick. Set aside on plate or wax paper (make 5-6 patties). Let set 5 minutes.&lt;br /&gt;&lt;br /&gt;In large frying pan heat 1/2 inch cooking oil to med. high temperature. Do not skimp on oil. When oil is hot place patties in pan and cook 4-5 minutes per side. Make sure patties get cooked all way through. Place fish steaks on pan, each with a pat of butter on top. Sprinkle evenly with garlic and onion powder and a pinch each of salt and pepper. Crumble the crackers evenly your hands) over the top of the fish (using your hands). Sprinkle with minced parsley.&lt;br /&gt;&lt;br /&gt;Broil (on the top rack), without turning, until the edges of the fish are browned and the flesh is a whitish pink (no longer clear) and it starts to look flaky when touched with a fork. Process with a few pulses until it is evenly chopped but be careful not to liquefy. Break the cream cheese into 4-5 sections and add to the processor.&lt;br /&gt;&lt;br /&gt;Add the onion powder and garlic powder and process the mixture just until the onions are finely minced.&lt;br /&gt;&lt;br /&gt;Cut smoked salmon into strips just large enough to fit on club crackers. Put the &lt;span style="font-weight: bold;"&gt;salmon&lt;/span&gt; fish steaks in a fairly shallow ovenproof dish with a lid, into which they fit quite closely.&lt;br /&gt;2. Scatter the ginger, garlic, tomato, chilli and yellow pepper over and around the fish and the cardamom pods in between.&lt;br /&gt;3. Empty the coconut milk into a separate bowl, add a good sprinkling of sea salt and gradually stir in the lime juice. Pour the mixture gently over and around the fish and cover the dish.&lt;br /&gt;4. Preheat the oven to 150C/300F/Gas 2. Put the dish on the centre shelf and cook for 40-50 minutes, until the fish is lightly done. To discover this insert a small, sharp knife into the centre of one of the steaks - if the flesh is slightly darker pink in the centre it will be perfectly cooked. Remove from the oven.&lt;br /&gt;5. It is recommended .&lt;br /&gt;&lt;br /&gt;INSTRUCTIONS&lt;br /&gt;In the kitchen, cover the grill with foil leaving room at the sides for the heat and smoke to circulate.&lt;br /&gt;Lay the salmon fillets skin side down on the foil.&lt;br /&gt;Squeeze the juice from 1/2 of the lemon on each fillet.&lt;br /&gt;Sprinkle liberally with the Johnny's seafood seasoning.&lt;br /&gt;Let the fillets sit for 1/2 hour or so at this point to marinate.&lt;br /&gt;Cover each fillet with about 1/4 inch of sour cream and  sprinkle sparingly with the dill weed.&lt;br /&gt;Place the alder chunks in water to soak for about 1/2 hour while you start the charcoal.&lt;br /&gt;Once you get it started, divide the charcoal in  half and pile it at the sides of the kettle for indirect cooking.&lt;br /&gt;Use about 20-25 pieces in each pile&lt;br /&gt;&lt;br /&gt;Place several pieces of alder on each side reserving some for about half way through the cooking  process.&lt;br /&gt;Put the salmon in, put the cover on and cook it for 20-25 minutes then add more alder and cook it for another 20-25 minutes, total cooking time is determined by the thickness of the fillets and outside temp.&lt;br /&gt;Cooking time is around 50 minutes. Over cooked salmon is the pits.&lt;br /&gt;The sour cream turns a golden brown, absorbs the smoke flavor and keeps the salmon nice and moist. Then grill about four inches from the coal.Cook the salmon for about fifteen minutes on each side or until fish flakes easily, occasionally brushing with sauce.&lt;br /&gt;This great &lt;span style="font-weight: bold;"&gt;salmon recipe&lt;/span&gt; is ready to serve...hmmm nice ! If necessary, add more mayonnaise to achieve a paste like consistency.&lt;br /&gt;Place salmon fillets onto the greased baking sheet, and press the crumb mixture on the top so that it is about 1/4 inch thick.
